Bacon Fish

Ingredients
1 (4oz) Swai Fish Fillet, defrosted1/2 c Panko Bread Crumbs (flavor optional)1 (15oz) can Diced Tomatoes with Green Chillies4 slices of precooked bacon Butter spray
Directions
1) Preheat oven to 400 degrees
2) Line a shallow sheet pan with aluminum foil
3) Spray foil with butter spray
4) Sprinkle a layer of panko bread crumbs over sprayed sheet pan
5) Sprinkle diced tomatoes over panko
6) Lay fish on panko crumbs and repeat above layers
7) After layered, Place the bacon diagonally across the topped fish and spray with oil
8) Place in preheated oven for 20 minutes or until golden brown to your preference.
9) Enjoy!
