500 Grams of high glutten finely ground flour325 grams of water (weight not volume)10 grams of salt3 grams of yeast
Directions
Mix water yeast and salt
Add flour
Mix for 4 minutes.
Leave out for 20 minutes (to rise)
Break into 5 balls
leave in fridge for 48 hours
