I actually make my own gravy. I boil bones from Turkey and freeze it in baggies.
Thaw the broth (about a cup or 2) in a skillet. Set aside 1/2 cup. I add about 1/2 cup of flour then stir it to make a "paste." Add milk (5 cups...depending on how much gravy you want.) Let it simmer, stirring often, until it thickens. If it's thick enough just add the reserved broth and stir. If you want it thicker, add a bit of flour to the reserved broth and stir. Then add to gravy and stir and simmer again.
When you have the gravy the thickness you want, add peas and carrots. Cook til these are warm.
Serve over toast, rice, or bread.
