Prairie Salad

Ingredients
Ingredients: *Vegetable salt reduced stock powder 1.5 tsp, Water, tap, 1.25 cup *barley, quick cooking 1 cup *onion, green ( 4tops) (25 g), *Bell Pepper, Red - 1 Cup, Chopped, Cranberries, dried, sweetened (craisins), 1/3 cup Sunflower Seeds, without salt, .5 cup, hulled *Soy Sauce, 1/2 cup Dijon or regular Mustard, 1 tbsp *2 garlic cloves, minced *Salt and pepper to taste
Directions
Bring vegetable stock to boil. Add Quick cooking barley (or real barley-but adjust cooking time!). Let cool. Once barley is cooled add green onions, red pepper, dried cranberries. Add dressing ingredients and sunflower seeds. Mix well. Can add salt and pepper to taste.
