2-Hour French Onion Soup

Ingredients
1 tsp. olive oil1 c. thinly vertically sliced sweet onion1 c. thinly vertically sliced red onion1/4 tsp. sugar1/4 tsp. pepper1/8 tsp. salt1/8 c. dry white wine4 c. lower sodium beef broth1/8 tsp. chopped fresh thyme4 (1 oz.) sliced French bread cut into 1-inch cubes4 (1 oz.) sliced reduced-fat reduced sodium Swiss cheese
Directions
Heat oil in a large saucepan over medium-high heat. Add onions to pan; saute 5 minutes or until tender. Stir in sugar, pepper, and 1/8 teaspoon of salt. Reduce heat to medium; cook 20 minutes, stirring frequently. Increase heat to medium-high; saute 5 minutes or until onion is golden brown. Stir in wine; cook 1 minute. Add broth and chopped thyme; bring to a boil. Cover, reduce heat, and simmer 2 hours.

Preheat boiler. Place bread in a single layer on a baking sheet; broil 2 minutes or until toasted, turning after 1 minute.

Place 4 ovenproof bowls on a jellyroll pan. Ladle 1 cup soup into each bowl. Divide bread evenly among bowls; top each serving with 1 cheese slice. Broil 3 minutes or until cheese begins to brown.
