Gluten Free Southwestern Meat Loaf

1 lb ground beef1/2 cup finely chopped onion1/2 cornmeal1 tsp dried cilantro1/2 cup chopped green bell pepper1 egg1 1/2 tsps ground cumin1/4 tsp salt1/4 tsp black pepper1 can (8 oz) tomato sauce, divided2 TBSP ketchup
Preheat oven to 350. Spray 13X9 inch baking pan with nonstick cooking spray
Combine beef, onion, cornmeal, cilantro, bell pepper, egg, cumin, salt, pepper, and half tomato sauce in large bowl; mix well. Combine remaining tomato sauce and ketchup in small bowl.
Shape met mixture into 6X9 inch oval in prepared baking pan. Top with tomato sauce mixture. Bake 55 minutes or until cooked through (160 F).
Let stand 5 minutes before slicing.
