My Gramme's Coleslaw

4 cups shredded green cabbage (about 1/2 cabbage)4 cups shredded red cabbage (about 1/2 cabbage)1/2 green pepper, sliced thinly4-6 green onions, chopped1 carrot, shredded1/4 cup minced fresh parsleyDressing:2/3 cup cider vinegar1/3 cup olive or canola oil1 Tbsp. celery seed1 tsp. dry mustard
Combine salad ingredients with 1/2 cup of sugar. Let stand 2 hours.
Put all dressing ingredients in a small saucepan. Bring dressing ingredients to a boil over medium heat. Pour mixture over cabbage, cover and refrigerate overnight, stirring twice. Add parsley prior to serving.
