Savory Sweet Potato Pancakes

Ingredients
2 5" long Sweet potato, grated4 whole large Eggs, or substitute equivalent0.5 cup shredded Red Onion1 tsp Garlic powder1 tsp Garam Masala Indian Spice Mix4 tbsp. (2 Scoops) Flax Seed, Cold Milled Golden Flax Seed by Flax USA,Salt, & Black Pepper to tasteCoconut Oil, 1 1tsp for pan
Directions
Combine all ingredients and let set for a few minutes to allow the ground flax to stiffen up the mix.

On medium heat, melt coconut oil on griddle. Pour out 8 4 inch pancakes (or do 4 at a time in a skillet) and cook until golden brown on both sides, about 4-5 minutes per side. Keep on low heat to allow potatoes to cook without burning.
