16 ounces cream cheese , softened1/8 cup of Cocoa (optional)1/2 cup sugar1/2 teaspoon vanilla extract2 eggs3 ounces semi-sweet baking chocolate, melted, slightly cooled1 chocolate crumb crust (1.5 bags of 100 calorie Oreo cookies are ideal)
Mix cream cheese, sugar, cocoa and vanilla with mixer on medium speed until well blended. Add eggs; mix until blended. Stir melted chocolate into 1 cup of the batter.
Pour chocolate batter into crust. Top with remaining plain batter. Bake at 350F for 40 minutes or until center is almost set. If muffin pans are used cooking time should be 15-20 min. Cool. Refrigerate overnight.
