Easy Buttermilk Pie

Buttermilk, lowfat (1 cup)Large eggs (3)Granulated Sugar (1 1/2 cups)Unsalted Butter (1 stick)Bisquick Baking Mix (1/2 cup)Vanilla Extract (1 tsp)
Preheat the oven to 350 degrees. Melt the butter. Combine all the ingridients in a large bowl. Beat (on any setting) until smooth. Pour into a pie pan (any size will do, but I typically use a 9" pan). Cook at 350 degrees for 40 minutes or until a knife inserted into the center comes out clean. This "pie" gets crispy on the top and edges, as if it is a crust, but it is actually more like a custard
