1 1/3 pound cubed pork, cut in small pieces2 T Extra Light Olive Oil12 oz roasted, seeded chopped green chiles (I used Big Jim chiles)15 oz can diced tomatoes10 oz can diced tomatoes and green chiles1/2 t onion powder1/4 t garlic powder1/2 t fresh minced garlic1/2 t ground cumin1 medium onion, chopped1/4 c flour
In large pan, brown pork in olive oil. In separate pan, combine chiles, tomatoes and spices; bring to boil and simmer while pork cooks. When pork is almost all browned add chopped onion and cook until just translucent; remove from heat and stir in flour. Return to heat and brown flour and pork mixture...be careful not to burn it. Pour chile mixture into pork and mix well; bring to boil and simmer 10 minutes. Pour all into 3-quart crock pot, fill to 3/4 full with water and cook on high until mixture boils; then reduce heat to low and cook 6-8 hours. Thicken as desired with additional flour mixed well with small amount of water.
