Black Bean Chili

Ingredients
2 tablespoons of Olive Oil1 small onion1 bell pepper2 Jalapeno peppers4 celery stalks20 cut up baby carrots1 cup of spinach (or frozen box)2 cans of black beans-(drained and rinsed)1 can of gandules (pigeon peas)(drained and rinsed)1 can of chicken broth1 can of spiced canned tomatoes1/2 cup of Ragu spaghetti sauce
Directions
In a stock pot sautee'
2 tablespoons of Olive Oil
Diced: onion
bell pepper
Jalapeno pepper
carrots, celery
After all is sauteed: Add:
2 cans of black beans
1 can of gandules (pigeon peas)
1 can of chicken broth
1 box of frozen spinach
1 can of spiced tomatoes
1/2 cup of spaghetti sauce

Bring to a boil, then simmer for 20 min or until thick

Add dry herbs for additional flavors
