Paleo Stew Chicken Sweet Potato Kale Slow Cooker

Boneless, skinless chicken breast, 2 lbs, cut into chunksOnions, 2 medium, dicedCarrots, 6, peeled and cubed Sweet potato, 2, peeled and cubedGarlic, 6 cloves, mincedChicken Broth, 2 cupsTomato Paste, 1 can (6 oz)Balsamic Vinegar, 6 tbsp Yellow Mustard, gluten free, 4 tspBay leaves dried, 6 leaves Kale, 1 bunch, about 7 c, rinsed, stems removed and broken into pieces
Add all ingredients except kale to crock pot and stir to combine. Cook on high for 4-5 hours or until carrots and potatoes are tender. In the last hour remove bay leaves and then add the kale, stir to combine. Optional: Shred the chicken when adding the kale. Once kale is tender serve hot.
