Low Fat Zucchini Bread

Ingredients
3 c. flour1 t. salt1 t. baking soda1 t. baking powder3 t. ground cinnamon2 eggs1 c. plain nonfat greek yogurt2 1/4 c. sugar (use 1/2 Stevia to reduce the calories)3 t. vanilla extract2 c. shredded zucchini
Directions
Combine all ingredients thoroughly. Place into 2 loaf pans sprayed lightly with cooking spray. Bake at 325 degrees for 40-60 minutes, or until cooked through. Cool completely before cutting.
