2 pounds russet potatoes, washed1/2 cup fat free Ranch dressing (not dry mix)4 slices bacon, cooked and crumbleddill weed, salt, pepper, and onion powder to taste (about 1 tsp. each)1/2 cup shredded cheddar cheese
cut potatoes (unpeeled) into cubes, about 1" size. place potatoes in large bowl. add dressing, bacon, 1/4 c. cheese and seasonings. stir well. sppon into a 13x9 inch greased baking dish and bake at 350 degrees for 1 hour, covered with foil. after the hour is up, remove foil, stir potatoes, sprinkle remaining cheese over top, turn up heat to 400 degrees and continue roasting another 15 minutes.
