Ingredients
Onion, raw, two mediumChickpeas (garbanzo beans), 4 cupsGarlic, 4 clovesGinger Root, 2 oz mincedHot green chile, chopped, 4 TOlive oil, .5 cupCumin seed, 1 TCumin seed, roasted, 2 tCorriander, 1 tPaprika, 2 tGaram masala, 1 tWater, 1 cupBaby lemon, juice and zest, 2
Directions
Heat oil in large saucepan. Add onion, garlic, ginger and pepper and sauté over medium heat until browned, about 5 minutes. Turn heat down to medium-low. Grind and add the coriander, cumin (raw and roasted), cayenne, turmeric, paprika and garam masala. Cook for a minute or two, then add the tomatoes and any accumulated juices, scraping up any bits that have stuck to the pan. Add chickpeas and water to make 2 quarts total. Simmer uncovered for 10 minutes, then stir in salt and juice and zest of two baby lemons.

Add water to make 2 quarts.
