Carrot, Apple, Pumpkin Muffins

Ingredients
1 box hyvee carrot cake mix , or any carot cake where mix = 170 cal per 12 servings.1 large apple, cored, peeled, and diced2 cups pumpkin puree, you can use canned or puree your own pie pumpkin.
Directions
Combine all ingredients in a large bowl, and mix well. Batter will be thin.Place heaping TBSPS into lined muffins tins, and cook at 350 for 18 minutes. Insert fork or toothpick to make sure they are done.--These will not brown.

Take out, and let cool for about 10 minutes before removing from pan.


Super Yummy, for a low-cal dessert place a dollop of whip cream on top, Just be sure to count the calories.
