Mini Turkey Bacon Quiche

Ingredients
2 whole eggs1/4 c. water1/4 c Natures Simply Egg Whites (about 2 egg whites)6 slices Butterball Turkey Bacon chopped1c chopped spinich1/2 c. chopped mushrooms1/4c. diced onions1 garlic clove minced2 oz grated or shredded cheddar cheese1 pinch of salt and pepper1 large diced cold tomato for topping
Directions
HEAT oven to 325ºF.

Beat whole eggs and 1/4 cup of water for 2 minutes. Add the egg whites and continue to beat for another minute or two in large bowl until well blended; add and stir in all other ingredients to the egg mixture except the grated cheddar cheese and tomato.

POUR into 12 nonstick muffin cups. Top with Cheddar Cheese lightly on each quiche evenly.

BAKE 40 min. or until tops are puffed and lightly browned.

REMOVE from muffin tins and serve with cold tomato topped to your delight.
