Whole Wheat Vegan Pumpkin Pancakes

2 cups whole wheat flour1.5 tsp baking powder1 tsp baking soda1 tsp allspice1 tsp cinnamon1/2 tsp ginger1/2 tsp netmeg1/2 tsp salt1 cup pumpkin puree1 Tbsp chia seeds mixed with 3 Tbsp water (or egg)2 Tbsp apple cider vinegar or lemon juice2 - 3 cups almond or non dairy milk (I use 2.5 usually)1 tsp vanillaTbsp maple syrup
Mix dry together
Mix milk with vinegar in a bowl and stir.
Mix chia seeds with water and let sit for a few minutes.
Add chia seeds to milk mixture then add pumpkin, vanilla and syrup.
Combine the wet and dry ingredients and stir until just combined.
Ladle 1/4 cup batter onto hot skillet and cook until bubbles appear. Flip and cook another minute or so.
Yum!!
