Semi-Homemade Classic Tomato Soup

2 Tbs. Extra Virgin Olive Oil1 Tbs Unsalted Butter1 Large White Onion1 Large Clove of Garlic, smashed2 Tbs. All Purpose Flour3 Cups Lower Sodium Chicken Broth28 oz. can Whole Peeled Plum Tomatos, pureed (include juice)1 1/2 tsp Splenda1 tsp. Ground ThymeDash of Salt and Pepper1 Tbs. Dried Basil, crushed
1) Heat oil and butter over meduim heat.
2) Add garlic and onion and saute until translucent
3) Add flour, coating garlic and onion.
4) Add tomatos, broth, sugar, and seasonings and bring to a simmer over medium high heat.
5) reduce heat to low, cover and simmer for 40 minutes.
6) Puree in batches in a blender to mix and thicken, and serve!
Serving Size: Makes 6 Generous 1 Cup Servings
