1 Cup Dry Lentils5 cups water1/4 tsp. dried marjoram1/4 tsp. thyme (fresh or dried)1 Tbl. Salt1/4 cup Extra Virgin Olive Oil3 Large Onions, chopped1 carrot, grated or finely chopped1 quart chopped tomatoes(canned or fresh)1/4 cup chopped parsley (fresh is best)1/4 cup Dry Sherry
Rinse and Drain Lentils (remove bad ones). Place lentils, water, herbs and salt in a soup pot. Bring to a boil and simmer for 20 minutes. Meanwhile heat olive oil on medium heat, add onions and carrot and simmer until soft, but do not brown. Add to soup pot with the lentils/water. Add tomatoes, sherry and parsley. Stir. Simmer 20-30 minutes.
