Laura's Best Tropical Banana Bread

Ingredients
1 cup butter1 cup Splenda brown sugar1 1/2 cups Splenda no calorie sugar5 med. bananas, mash4 eggs1 cup fat free sour cream1/2 cup crushed pineapple, drained1 1/2 tsp. vanilla1/2 cup shredded coconut, lightly toasted (put 2 Tbsp. aside for topping)2 cups whole wheat flour1 cup bread flour1/2 cup flax seed meal2 tsp. baking soda2 tsp. baking powder1/2 tsp. salt2 Tbsp. raw sugar (for topping)
Directions
1. Preheat oven to 350 degrees. Grease 2 loaf pans.
2. Cream butter and sugars together until light and fluffy.
3. Beat in mashed bananas.
4. Beat in eggs one at a time.
5. Mix in sour cream, pineapple, vanilla, and (all but 2 Tbsp.) coconut. Mix until completely incorporated.
6. In a small bowl, blend together the flours, flax seed meal, soda, powder and salt. Add to the wet ingredients. Mix well.
7. Divide evenly into 2 prepared loaf pans. Sprinkle each top with 1 Tbsp. raw sugar and coconut (this give the tops a nice crunch).
8. Bake at 350 degrees for 50-60 minutes or until a toothpick inserted into the middle of each loaf comes out clean.
9. Cool for 5 minutes and turn out onto a serving plate.

    Great recipe. Would NEVER use Spenda. Used 1/4 br sugar and some stevia. Kaede, u need to do more research on Splenda. Italian researchers found artificial sweetener sucralose (Splenda) has caused leukemia in mice. Huffington Post, June 2013 - 8/3/13

    LOVED this! Makes 2 large loaves, one good for freezing for another time. Pineapple and coconut are 2 of my favorite flavors anyway. Yes, it is very moist. I used regular white flour instead of the bread flour and didn't use the 1/2 c. of flax seed meal and it turned out great. - 3/16/08
