rayne's low carb spaghetti squash au gratin

Ingredients
Directions
Spaghetti Squash, 2 cup (1 medium, baked)sweet yellow onion, raw (1/2 medium onion)Butter, salted, 2 tbspSour Cream, 1/2 cupCheddar Cheese, 16 ozKosher Salt, 2 tspPepper, black, .5 tspGarlic, .5 clove
half/seed and bake squash til tender (about 1 hour at 350)
in large skillet, lightly caramelize onions in butter
add garlic, salt & pepper
scrape spaghetti squash into pan and mix
add sour cream
spread evenly in skillet (or in casserole dish)
top generously with cheese
bake for 15-20 minutes at 375 til cheese forms a crust.
Serving Size: makes 6 large portions
