Garden Oatmeal Muffins

3c oats2c almond milk1c apple juice1c plain yogurt2 egg1c apple sauce2c buckwheat flour1c coconut flour1c packed brown sugar7tsp baking powder1tsp salt2tsp cinnamon2tsp nutmeg2c grated carrot2c grated zucchini
In a bowl cover oats with almond milk, apple juice and yogurt. Let stand 5 minutes. Add egg and apple sauce and mix well.
In another bowl combine flours, sugar, baking powder, salt, cinnamon and nutmeg. Mix well.
Add oat mixture and stir until just moist. Fold in grated zucchini and carrot.
Spoon into greased or paper lined muffin tins and bake at 400 for 20-30 minutes.
Serving Size: makes two dozen
