Quinoa Black Bean Patties

Ingredients
6 TBS olive oil3/4 cup of red peppers diced2 cloves of garlic, minced1/2 onion (or to taste)1/2 fresh cilantro leaves1 can of black beans, drained3 cups quinoa1 egg, beaten2 cups bread crumbssalt and pepper to taste
Directions
Spin on a veggie burger type patty
Heat 3 tbs. of olive oil (or less), add red peppers and sauté until slightly soft, about 3 min.
Add garlic and onion and continue to sauté until soft
Remove from heat, cool for a few minutes and combine with black beans and cilantro, salt & pepper
Add egg (optional)
Divide into 7 or 8 patties and refrigerate for about 10 min.
Dredge the patties in bread crumbs
Fry in remaining olive oil until browned (abt 3 min each side)
