Easy Low-Fat Low-Sugar (but still delicious) Oatmeal Banana Quick Bread

Ingredients
1 cup quick oats1 1/2 cups flour (you can half half all-purpose and whole wheat)1/3 cup packed brown sugar (I don't have brown sugar, so I usually just use white)1 1/2 tsp cinnamon1 tsp baking powder1 tsp baking soda1 egg1 1/2 cups mashed bananas (about 4 bananas)1/3 cup plain yogurt (in place of vegetable oil)1 tsp vanilla Topping:2 tbs quick oats
Directions
Preheat oven to 350° C (180° C). In a large bowl, whisk together all the dry ingredients. In a separate bowl, whisk together wet ingredients and then pour over dry. Stir until just moistened. Scrape into lined 9" x 5" (2L) loaf pan. Sprinkle with rolled oat for the topping. Bake until toothpick comes out clean (about 1 hour). Let it cool in pan for 10 minutes, remove from pan, and let cool on rack. Slice into 10 evenly-sized slices.

    So good, even my husband LOVED it! A few slight changes I made - Splenda instead of the sugar, and then I added 1/3 cup mini chocolate chips. I also baked it for only about 30 minutes, just a bit gooey in the center. Delicious! - 3/29/19
