Applesauce Oatmeal Muffin Cake

TOPPING 1/2 cup Oats (quick or old fashioned, uncooked) 2 tablespoon firmly packed brown sugar 2 tablespoon margarine or butter, melted 1 1/2 teaspoon ground cinnamon MUFFINS 3 cups Oats (quick or old fashioned, uncooked) 2 1/2 cups all-purpose flour 2 teaspoon baking powder 1 1/2 teaspoon baking soda 2 teaspoon ground cinnamon 2 cup unsweetened applesauce 1 cup 1% or skim milk 1 cup firmly packed brown sugar 3 tablespoons vegetable oil 2 egg, lightly beaten
Bake 20 to 22 minutes or until deep golden brown. Cool muffins in pan on wire rack 5 minutes. Remove from pan. Serve warm.
I always bake this in a 13X9" pan, greased for approximately 30-35 minutes or until a toothpick inserted into center comes out clean.
Serving Size: Makes 24 muffins or 2 inch pieces.
