One Pot Tomatoe Parmesan Rotini For Four

Ingredients
3 tbsp. all purpose flour3/4 tsp salt3/4 tsp dried Italian seasonings1/4 tsp pepper3 cups milk (I use 1%)2 cups water12 oz whole wheat rotini or other short pasta(aprx 5-1/2 cups)2 cups small broccoli florets (I used frozen)1 can (19 oz) Italian style stewed tomatoes DRAINED (I used Italian style diced)1/2 cup freshly grated Parmesan cheese1/4 cup fresh chopped basil-(sprinkled on top)Nutrional Information Per ServingCalories 494Protien 26 gCarbohydrate 83gFibre 9 gFat 9 gSodium 992 mgCalcium 44%/486mg
Directions
1. In a large pot, add milk and water. Whisk flour, salt, Italian seasonings and pepper into the milk. Heat over medium heat just until steaming, stiring twice. Once steaming stir in Rotini pasta cover and reduce heat to medium low. simmer stirring often to prevent sticking for about 10 minutes.
Stir in broccoli cover and simmer about 2 minutes longer or until rotini is almost tender.
2. Uncover and cook until stirring gently for about 3 minutes until pasta is tender but firm, broccoli is tender crisp and sauce is thickened.
3. Stir in drained tomates and parmesan cheese. Cook breaking up tomatoes with a spoon until heated through.
Serve sprinkled with fresh chopped basil


OPTION: Replace whole wheat rotini pasta with regular pasta decrease cooking time in Step 1 to aprx. 9 minutes. Continue to follow all steps.
