Twice Baked Cauliflower

1 large head cauliflower, cored and cut into small pieces4 oz. fat free cream cheese1/2 cup fat free greek yogurt1/4 cup minced green onions 2 Tbsp Parmesan cheese, shredded4 slices center cut bacon, cooked & crumbled3/4 cup fat free cheddar cheese, shredded
1. Preheat oven to 350 degrees.
2. Cook cauliflower in large pot of boiling lightly salted water until tender, about 7 minutes. Drain well and mash using a potato masher, leaving some chunks. Mix in cream cheese, yogurt, green onion, Parmesan, and 3/4 of the bacon.
3. Spread evenly in a medium-sized glass casserole dish. Sprinkle with cheddar cheese remaining bacon.
4. Bake 30 - 35 minutes, or until hot and bubbly.

My husband doesn't like cooked cauliflower. But he was very complimentary about this dish. He thought it was so full of other flavors that he "wouldn't even have tasted the cauliflower if I hadn't told him it was there." I did mix all the cheeses in at once and then sprinkle only the bacon on top. - 8/29/15
