No Fuss Salmon Croquettes

Ingredients
Pink Salmon (fish), flaked 280 grams - from 400g tinOnions, raw, .5 cup, finely chopped Celery, raw, .5 cup, finely diced Dill weed, dried, .5 tsp Egg, fresh, whole, raw, 2 medium Breadcrumbs, Orgran Gluten Free Rice Crumbs, 30 grams approx - just enough to coat each croquette.Olive Oil, 4 tbsp - enough to shallow fry
Directions
Squeeze water from 400g canned salmion and flake. Add onion (or spring onion if you prefer), celery, dill, egg and salt n' pepper to taste. Form croquettes - I make these about the length of my thumb and 1.5 times the width. Roll in breadcrumbs and fry, turning on all four sides regularly. Drain well on paper towel. Serve warm.
