Buffalo Chicken Macaroni & Cheese Muffins

Ingredients
1 Tbsp I can't believe it's not butter light1 Tbsp flour1 cup skim milk1/4 tsp garlic powder1 cup fat free cheddar cheese, shredded 1/3 cup fat free blue cheese dressing3 Tbsp Buffalo sauce5 large egg whites1 chicken breast, cooked & shredded1 medium celery stalk, sliced4 cups Dreamfield's macaroni, cooked
Directions
1. Preheat the oven to 400 degrees. Lightly spray a 12 cup muffin tin with cooking spray and set aside.

2. In a large skillet, melt the butter over medium heat. Add the flour, and mix until thick. Stir in the milk and garlic powder and raise the temperature to bring the mixture to a low boil. Add the cheddar cheese and whisk mixture together until thoroughly combined. Remove mixture from the heat.
3. Stir in the blue cheese dressing, egg whites and Buffalo wing sauce and mix until combined.

4. Add the chicken and celery to the sauce and stir together. Add the macaroni and continue to stir until well coated. Spoon the macaroni mixture evenly into the prepared muffin tin.

5. Bake 15 minutes or until the tops have browned. Allow to cool at least 15 minutes before removing from pan.
