Ingredients
1 lb chicken breast, skin/bone removed, cooked1 chicken leg/thigh, skin/bone removed, cooked1 cup chopped or sliced sweet yellow onion2 cloves garlic, minced1 cup chopped or sliced green bell pepper32 oz jar great northern beans1 cup mild or medium chunky salsa1 cup monterey cheese, shredded
Directions
Makes 8 hearty servings.

Spray dutch oven with non-stick cooking spray. Toss in onions, peppers, garlic, and a sprinkle of coriander (optional). Saute lightly over medium heat until onions are translucent. Add a little water if it starts to burn. (Garlic will be bitter if allowed to brown.)
Add beans and salsa. Continue to cook over medium heat. Chop or shred chicken and add to the pot. Stir to combine and heat through.
Cheese should be added last just before serving.

Alternatives:
Cheese may be omitted to cut calories and will still be delicioso!
1 cup of chicken broth can be added. If you like it thinner, wish to increase number of servings, or create bigger servings without adding calories.
