Gluten Free Chicken Fingers

Ingredients
1 lb boneless, skinless chicken breasts1 cup almond meal (not almond flour)1 tsp sea salt2 eggs4 Tbs oil
Directions
rinse chicken, pat dry, then slice into strips

combine almond meal and salt, in another bowl whisk eggs. dip chicken strip into egg and then coat with almond meal.

heat oil over medium heat, saute chicken in the oil 3 minutes per side until golden

transfer to paper towel and serve warm
