14 3/4 ounce canned salmon1 large egg, lightly beaten1/2 cup whole wheat or white flour1/4 teaspooon dill weed1 medium onion, chopped1/3 medium green pepper, chopped1 1/2 teaspoon baking powdercooking spray
1. Drain salmon, reserving 1/4 cup of liquid. Discard salmon bones and skin.
2. In a bowl, combine the salmon, egg, flour, dill, onion & green pepper. Mix well.
3. Stir baking powder into the reserved juice; add to the salmon mixture.
4. Heat a skillet over medium high heat. Spray with cooking spray.
5. Drop batter by the 1/4 cupfulls into the skillet. Cook the patties for 2-3 minutes on each side or until each side is golden brown. Add spray oil as needed.
Drain on a paper towel. Serve warm.
