Radish Hashbrowns

Ingredients
1/2 Lb. Red Radishes, grated1/4 of a Medium Onion, finely slicedsalt and pepper to tastea pinch or two paprika (you can use sweet or spicy, I like spicy!)
Directions
saute onions in some cooking spray and a bit of water until translucent, then add radishes. cook until their color deepens and they start to crisp up a bit.


seriously, you can't even taste the bitterness radishes normally have!

serve with your favorite breakfast items, such as my low fat mushroom and leek frittata!

    This was surprisingly good. Mine crisped up just fine. I did squeeze the water out of them in a towel before cooking, just like you would do a potato. I added mustard to mine, I'm weird like that. My kids had ketchup on theirs and never even noticed it wasn't potatoes. - 3/15/12

    I was able to get them to brown, but I did use butter instead of cooking spray to sauté the half onion to go with the huge bunch of radishes I got from my garden. We liked it, but it was a bit bland. I want try a half potato/half radish mixture next time! - 6/23/11

    I really like it, my husband thought it was just ok. Like the last rater said, I couldnt get it to brown which I imagine would make it taste more like hash browns. - 3/8/11

    These were fast, easy, and tasted pretty good. i don't think i cooked them quite long enough because they didn't crisp, but they were still good. - 6/1/10
