Cleochatra's Oopsie Rolls

3 large eggs1 packet of Splenda1 dash salt1 pinch cream of tartar3 ounces cream cheese
This recipe comes from Cleochatra's "The Lighter Side of Low Carb" blog. There is a lot more about these rolls there, including a recommendation for special pans to cook them in.

Preheat oven to 300 degrees.
Separate the eggs and add Splenda, salt, and cream cheese to the yolks. Use a mixer to combine the ingredients together.
In a separate bowl, whip egg whites and cream of tartar until stiff (if you're using the same mixer, mix the whites first and then the yolk mixture).
Using a spatula, gradually fold the egg yolk mixture into the white mixture, being careful not to break down the whites.
Spray a cookie sheet with non-stick spray and spoon the mixture onto the sheet, making 6 mounds. Flatten each mound slightly.
Bake about 30 minutes (You want them slightly softer, not crumbly). Let cool on the sheet for a few minutes, and then remove to a rack and allow them to cool. Store them in a bread sack or a ziplock bag to keep them from drying out.
Makes 6 @ about 85 calories a piece, >1 carb per.

Removing them from the cookie sheet I took a little nibble. I thought yuck these people have lost their tastebuds! I let the rolls cool and placed them in a zip lock bag .This afternoon I decided to make myself a burger and used the oopsie roll. IT WAS GREAT! Something happens while they sit. - 6/19/08

I'm surprised when people on LC diets change recipes to lower fat. LF products nearly always have more carbs. Calories matter, but not as much as the spikes in blood sugar from carbs. One user thought that Cleochatra's site says "6 Net carbs," it doesn't it says 0.6 net carbs. Big difference. - 11/17/12

Love these! Taste good with everything. I found that they are higher calorie than the low-cal fiber breads, but MUCH more satisfying. They don't leave you hungry. My fave is to make a little egg salad to top them with. Or make cinnamon toast. Cheese toast. French toast...see a pattern here? - 3/22/08

FANTASTIC! I used LF cream cheese to lower the calories to 45/roll. 4 TWO TIPS: 1) Whip the egg whites until you can just about turn the bowl upside down without it sliding. 2) Add yolk mixture to the egg whites a little bit at a time. I add it a little bit at a time to 3 total times. - 2/18/12

These were awesome. I made bacon and fried egg sandwiches with them for my first day of Atkins and they were amazing! I thought, "these oopsie rolls are going to help me get through this diet!" Also, my 2-yr-old couldn't stop eating them. He ate 2 whole plain rolls and asked for more. - 7/13/11

Eggcellent recipe. This was the first time I have ever made an attempt to make these. I have heard of them and was wanting to try my hand at them for years. absolutely awesome, i used extralight philly too. i cant believe how good these are and are tony ferguson friendly. i think this is the best recipe ive found and like the others said u have to let them sit a bit. dont panic when u think ur making meringues that seem disgusting. they really are great - 6/26/10
