Pineapple Slaw with Ginger Lime Dressing

Ingredients
1/4 cup fat free Greek yogurt 2 Tbsp gingerSalt & pepper, to taste3 Tbsp lime juice1 Tbsp Splenda2 tsp sugar3 Tbsp olive oil2 cups cabbage, shredded 2 medium radish, shredded2 scallions, minced 1 cup pineapple, diced 1/2 cup almonds, sliced
Directions
1. In a small bowl, combine yogurt, ginger, salt & pepper, lime juice, sugar and oil and mix well. Set aside.

2. In a large bowl, combine the cabbage, scallions, pineapple and almonds. Add the yogurt mixture and toss to combine, ensuring all cabbage is coated. Cover tightly and refrigerate at least 1 hour before serving.
