Spinach & Feta Casserole

Ingredients
4 egg whites1 eggs2 cups fat free cottage cheese2 cups baby spinach, roughly chopped1/2 medium onion, chopped1/4 cup fat free feta cheese1/4 cup I can't believe it's not butter light, melted2 Tbsp flourSalt & pepper, to taste
Directions
1. Preheat oven to 350 degrees. Lightly spray a medium sized casserole dish with cooking spray and set aside.

2. In a large bowl, combine egg whites, whole egg, cottage cheese, spinach and onions and mix well. Stir in feta, butter, flour and salt & pepper and mix well. Transfer mixture to prepared casserole dish.

3. Bake, uncovered, 45 minutes or until the center is set and the top is lightly browned. Allow to cool at least 5 minutes before serving.
