SPICY! Delicious Haitian Cabbage Relish- No Guilt

Ingredients
2 cups fresh shredded cabbage3 scotch bell peppers1/4 cup shredded onion1/4 cup diced carrot1/4 peas1/4 corn(i sometimes buy a mixed bag of frozen peas corn and carrots. green beans are fine too.)4 whole cloves8-10 peppercorns1 tsp salt3 cups white vinegar
Directions
Snip off the stem of the peppers, cut each into 4 pieces, and keep the seeds. Place hot peppers, cabbage, carrots, onion, cloves, salt, and peppercorn in a quart size jar. Then add vinegar. Close jar tightly and let sit at least 24-48 hours before serving. Serve with chicken, fish, rice, plantains...
