Slow Cooker Beef Bourguignon

1 1/2 lb beef roast, cubed3 slices center cut bacon, halved2 tsp olive oil1 medium onion, sliced in rings1 cup baby carrots3 garlic cloves, chopped1/2 tsp thyme1/2 rosemary1 tsp basil1/4 tsp savory1/4 tsp sage1/2 tsp oreganoSalt & pepper, to taste1 Tbsp no salt added tomato paste1 cup red cooking wine
1. Pour olive oil in the bottom of the slow cooker. Layer 3 half-slices of bacon in the bottom and top with the onion rings and garlic. Put the meat into the pot on top of the onion and add spices. Add tomato paste. Lay the other 3 half-slices of bacon on top of the meat, and add the carrots. Pour wine over the meat.
2. Cover and cook on LOW 8 hours.
