Lentil Vegetable Soup

1 c lentils washed1 chicken bouillion cube dissolved in 3 cups water1 c shredded cabbage1 1/2 c chopped carrots1 20 oz tin diced tomatoes1 28 0z tin crushed tomatoes1 c chopped onion1 c chopped celery2 tsp salt1/2 tsp pepper1/2tsp dried thyme1 clove garlic crushed2 T canola oil1 T dried parsley1 T red wine vinegar1 bay leaf
Saute carrots, onions, celery garlic and cabbage in oil until soft. Add seasonings, bouillon cube in water, canned tomatoes and lentils and simmer one hour or so until lentils and vegetables are cooked.
