1 can chickpeas, cooked, rinsed, drained1/2 bag frozen mixed vegetables12-14 oz. dry red quinoa, cooked (5 to 6 cups yield)2 tbsp parsley2 tbsp Dijon mustard2 tbsp roasted garlic, pressed into pasteBragg's Liquid Aminos (soy sauce)Trader Joe's Everyday Seasoning (pepper blend)herbal salt1 or 2 eggsas needed to firm up mixture for forming into patties:Panko bread crumbsChia seeds, ground finely (powder)olive oil
Directions
Oil a skillet on medium-low heat. Cook until golden brown; flip and cook on other side. Enjoy.
