Lentil Salad

Ingredients
1 1/3 cups brown lentils1 slice lemon1 clove garlic, peeled (left whole)1 medium head broccoli, cut into florets1 large bell pepper, roughly chopped1/3 cup dried apricots, quarteredjuice of 1 lemon2 tbs olive oil1/2 tsp ground cumin1/4 cup sliced almonds or sunflower seeds
Directions
Place the lentils in a pot of water with the garlic clove & lemon slice. Simmer for 25-30min or until tender. Drain.
Place the broccoli in a bowl and cover with boiling water. Stand for 2min, then drain & refresh under cold water.
In a jug or jar combine lemon juice, olive oil and cumin (add other seasonings if desired)
In a large bowl, combine lentils, broccoli, pepper, apricots. Add dressing and toss to combine.
Divide salad between serving bowls (or airtight containers if this is for lunches!) and sprinkle the almonds over the top.
