Ham and Potato Soup

3 Cups Russet Potato Chopped1/3 Cup Onion Chopped1/3 cup celery chopped1/4 cup carrot chopped1 cup cooked ham chopped3.5 cups chicken stock2 cups skim milk1/2 teaspoon peppersalt to tastegarlic to taste
In a large stock pan add chicken broth, onion, celery, potato, carrot, and ham. cook on medium heat approximately 10-15 minutes or until potatoes are cooked through. In a separate sauce pan, melt butter over medium low heat. Slowly add in flour mixing with a whisk until blended and thick. Slowly add milk, stirring constantly until creamy. Continue stirring on medium heat 3-4 minutes until thickened. Add immediately to chicken stock in large pot and mix thoroughly. Heat through and serve!
