Acorn Squash Soup

Ingredients
1 acorn squash1/2 Tbsp olive oil1/2 medium yellow onion1 shallot4 cloves garlic2 cups chicken broth1 Tbsp chipotle pepper in adobo saucespices:gingerpaprikacuminsaltchili powderpepper
Directions
roast squash in 350 degree oven for 45 minutes
saute onion, shallot, garlic in olive oil
scoop cooked squash into onion mixture
add spices you prefer
add chicken broth and chipotle
puree soup in VitaMix
