Apple spice muffins

Ingredients
1 1/2 cup of white flour3/4 cup sugar2 tsp baking powder1 tsp ground nutmeg1 1/2 tsp cinnamon1/2 tsp salt1 egg1/3 cup vegetable oil1/3 cup soy milk3 granny smith apples, peeled and shredded
Directions
Pre-heat the oven to 400F. Peel your apples and shred them in a bowl. You should get a little over 1cup with 3 medium granny apples. Make sure you strain them to get rid of the excess liquid. Set aside.

In a bowl, combine all the dry ingredients - flour, sugar, baking powder, nutmeg, cinnamon, salt.

In a 1cup measuring cup, pour 1/3 cup of vegetable oil. Add the egg, then just enough milk to fill the cup. Whisk well.

Add the shredded apples to the dry ingredient, folding them in with a fork. Then gently add the wet ingredients, and mix until only just combined - don't overmix! Some white streaks of flour leftover are ok!

Line a regular muffin tin with muffin liners, and fill them up to 2/3. If you want, top each muffin with a dash of brown sugar and quick oats.

Bake in the pre-heated oven for 25 minutes.
