Curried Lentil, Sweet Potato and Carrot Soup

Ingredients
2 leeks, white and light green parts only, chopped2 cups sweet potatoes, cubed1 cup carrots, chopped1 cup dried red lentils1 1/2 tsp curry powder6 cups chicken broth
Directions
Place all ingredients in large saucepan, cover and bring to a boil. Reduce heat and simmer on low for 20 to 30 minutes - until vegetables and lentils are tender.

Puree using an immersion blender.
