Beef Enchilada Rice

2.5 Cups cooked rice (white)1 pound lean ground beef (96% lean)2 Cups mixed peppers & onions (frozen)1 teaspoon chili powder1/2 teaspoon ground cumin1/4 cup light sour cream2 cups green enchilada sauce (about 1 1/2 cans)1 cup shredded cheddar cheese, divided1 can sliced black olives1 cup canned black beans, rinsed1/2 cup sliced green onions
Cook the hamburger with peppers & onions until cooked through. Add chili powder & cumin. In a separate bowl, mix sour cream, enchilada sauce, 1/2 of the cheese.
Once the meat mixture is cooked through, add olives and black beans, followed by enchilada sauce mixture.
Cook through and garnish with remaining cheese & green onoins.
