Curried Pumpkin Soup

Ingredients
6 cups mashed roasted pumpkin (plain canned pumpkin can be substituted)5 cups vegetable broth (no salt added)1 onion, chopped1 garlic clove, minced2 tsp minced ginger root1.5 tsp olive oil1 tsp red chili pepper flakes (or less)1 Tbl curry powder1 tsp coriander seed, crushed1.5 tsp salt2 cups Fat free half and half1 cup light sour cream (or low fat milk)
Directions
1. In a stock pot, saute onion, garlic, ginger root in olive oil; add in spices (pepper flakes, curry powder, coriander). Saute 5 minutes to release flavors from spices.

2. Add vegetable broth and pumpkin puree to the pot. Bring to boil; reduce heat. Simmer for 20-25 minutes.

3. Add half and half and sour cream, cook 10 minutes more. Do not boil.
