Ingredients
Directions
1 cup non-fat (skim) milk, plus more for serving3/4 cup medium-grind bulgur1/4 cup chopped dates1/4 teaspoon salt2.5 tablespoons honey1 cup water 1/4 cup almond milk1 large apple (I used JonaGold and was thrilled)Ground cinnamon Ground nutmeg1.5-2 tablespoons butter3 tablespoons powdered sweetener
1. In a medium pot, add milks, bulgur, dates, salt, cinnamon, nutmeg and water. Bring to boil, then reduce heat to medium and allow to simmer (stirring every so often) for 15 minutes. Covering is recommended, but watch for overflow.
(I like to have another burner going at medium heat and move the pot over, because my burners take a LONG time to cool down from High to Medium, and my pot will overflow).
2. While the bulgur simmers, core, peel, and slice apple. Melt butter into a frying pan (I like to use the burner I used to boil the other pot on) and lay apple slices flat in pan once hot.
( At any point, if your 15 minutes is up, simply remove bulgur from heat and leave uncovered so that excess liquid may evaporate. )
3. Add sweetener, and 1/2 teaspoon of ground cinnamon ( you may add more if you like ) and stir apples to evenly distribute.
4. Continue cooking and flipping until apple slices are tender NOT MUSHY but definitely softened all the way through.
5. Serve 1/3 cup pats of porridge with a splash of cold milk and 3-4 apple slices.
